Beetroot Hummus

Ingredients: Serves 4

3 x pre-cooked beetroots (the unpickled ones)

1 can of chickpea (drained and rinsed)

100ml of left-over beetroot juice or water

2 cloves of garlic

½ tsp Smoked paprika

Juice from one lemon

¼ tsp salt

¼ cumin powder

2 tbsp of good quality nut butter or tahini 

 

Method

Blend ingredients together in food blender until smooth.  Store in airtight container in the fridge.
