Carrot-Cake Protein Overnight Oats

This is an absolute treasure of a breakfast. Packed with nutrients and bursting with flavour. We topped with roughly chopped nuts and dried fruit

Ingredients: Serves 2

  • 80g of rolled oats

  • 40g vanilla protein powder

  • 1 tbsp of mixed seeds (we used a prepared shop brought mix that contained pumpkin, linseed, sunflower, hemp seeds)

  • 1 tsp cinnamon

  • ¼ tsp Allspice

  • 70g of grated carrot

  • 300 mL Almond milk

Method

  1. Mix all dry ingredients in a bowl

  2. Add milk and carrot, mix thoroughly

  3. Pour into two separate containers

  4. Allow to chill in fridge over night

  5. Add toppings to taste
