Açai Bowl

Packed with antioxidants, vitamins, minerals, fibre, protein, and healthy fats

Ingredients: Serves 2

•1 small ripe mango, cut into chunks

•100g pineapple, cut into chunks

•2 ripe bananas

•2 tbsp coconut yogurt

•150mL coconut milk

•2 passion fruits, halved,

• 50g blueberries

•2 tsp coconut flakes

•a few mint leaves

Method

  1. Put the mango, pineapple, bananas, yogurt and coconut milk in a blender, and blitz until smooth and thick.

  2. Pour into two bowls and decorate with the passion fruit, blueberries, coconut flakes and mint leaves.

  3. Will keep in the fridge for 1 day.

  4. Add the toppings just before serving.
