Sweet Chilli Chicken

It packs a real punch of flavour and works as an accompaniment to rice, stir fry or even a great salad. Take your pick!!

Ingredients: Serves 2

•2 Skinless chicken breasts

•2 cloves of garlic

•1 thumb size piece of ginger

•2 tsp dark soy sauce

•4 tbsp sweet chilli sauce

•1/2 tsp Paprika (not hot or smoked)

•1/2 tsp sesame oil

•1 tsp olive oil

Method

  1. Pre-heat oven to 200°C

  2. Cut the chicken into strips (5 per breast)

  3. Place the garlic and ginger into a food processor along with the Paprika, sesame oil and olive oil and blitz to a puree, then coat the chicken in the marinade place into a freezer bag and allow to work its magic for 1 hour. (Overnight is even better)

  4. Pre-heat a frying pan and add a little extra oil the sear the chicken for 10-20 seconds on each side to get a nice charred flavour.

  5. Place the chicken onto a baking sheet and coat with the sweet chilli and soy sauce mixture.

  6. Place into the oven for 10-12 minutes and serve with your choice of side dishes.
